This morning I recorded a decrease of 9 to 108 mg/dL to my early morning blood sugar count.
Last night’s supper, great recipe – Spicy Italian Sausage, Peas and Rigatoni.
I am always looking for a simple and quick recipe. This was it. I found this one at Allrecipes – Pasta with Peas and Sausage. And yes that above image was taken last evening in my kitchen.
Spicy Italian Sausage. Carb count ≈ 4 grams.
Green peas. Carbs ≈ 10 grams.
Rigatoni pasta. Carbs ≈ 43 grams.
And of course, Blue Bunny Cherry Pickin’ Chocolate Ice Cream. Carbs ≈ 42 grams.
Total carbohydrate count last night approximates 99 grams.
Results –
FSB – 108 ↓ down 117 (Normal range 100 – 125 mg/dL)
A1c – 5.36 ≡ 5.36 (Normal range 5.7 – 6.4 %)
eAG – 107.2 ≡ 107.2 (Normal range 117 – 137 mg/dL)

Food for thought - I am trying to control my diabetes with exercise and food. I have eliminated all diabetes medication. I am keeping my weight stable, and Jim's gotta eat.

JGE 27 – Garlicky Chicken Pasta

I was not in the mood to cook tonight, even though I knew that I should. I was not in the mood to go to a restaurant. My brain battled and settled. I opted to cook something quick, simple and easy.
Today I picked up my fresh produce from Urban Oasis. Included as a part of the pickup was a bunch of Arugula. In my freezer was half-a-pound of ground chicken. So looking for the one-plus-one answer, I entered the words “chicken” and “arugula” into Google search.
I immediately spotted a link to Chatelaine.com for a recipe of “Garlicky chicken pasta”. I clicked the linked and read the ingredients. Well… A simple list, but I had no linguine or orecchiette pasta, no garlic butter, no boneless chicken breasts, no cherry tomatoes. I did have three of the seven ingredients – arugula, salt, and pepper.
I substituted Rigatoni for the pasta.
I decided to chop some fresh garlic and add it to butter. The chicken I had was ground. And there were whole vine-ripe tomatoes in the kitchen. I diced one tomato.
And yes I proceeded to create my version of Garlicky Chicken Pasta.
A great, simple, quick, easy dinner. Hell, Jim’s Gotta Eat.
