JGE 72 – FBS Up 12 Points – Taco Bus and Blood Orange Soda

Good Day,

Well I knew it would be knockdown, so-to-speak, this morning. My early blood sugar count increased by 12 points to 118 mg/dL.

I had a craving last night for supper, something Mexican from Taco Bus. And yes I knew that at any time I have that craving for some Mexican foodstuff I am going to take a hit in the numbers. At Taco Bus I waited for my meal by scarfing down a number of corn chips dipped in hot sauce. I am sure that I must have downed at least 8 ounces at 18 grams of carbs an ounce. That’s 144 grams of carbohydrates, and that was before the main part of the meal.



My supper was a 10” Quesadilla stuffed with Scrambled Egg and Chorizo, topped with Guacamole, Sour Cream, and Pico de Gallo. I’m trying to figure out what 1 quesadilla serving (37.2 grams of carbs) is as compared to the large 10” one that I ate. And of course there were the sides of Mexican Rice and Fried Beans.



And when I got home I decided to have a San Pellegrino Blood Orange Sparkling Beverage. Carb count – 33 grams.

Guess what? I lost the supper battle last night. But would I repeat the Taco Bus supper? Hell yes.





Results –

FSB – 118 ↑ up 106 (Normal range 100 – 125 mg/dL)
A1c – 5.36 ≡ no change 5.36 (Normal range 5.7 – 6.4 %)
eAG – 107.2 ≡ no change 107.2 (Normal range 117 – 137 mg/dL)

JGE 71 – FBS Down 4 Points – Shrimp and Gnocchi and Shepherd’s Pie

Good Day,

This morning's early blood sugar count reduced by a net of 4 points to 106 mg/dL.

I didn’t post yesterday’s showdown numbers. I was “captivated” by completing our communities’ quarterly newsletter.

Supper the night before last was Shrimp and Peas and Gnocchi. An excellent quick fix, and ever so flavorful. Yesterday morning’s FSB registered down by 8 points at 102 mg/dL.



For supper last night we decided to try Carrollwood’s newly opened Maloney’s Local Irish Pub. My fare included sharing The Local Sampler and the Tuesday Special Shepherd’s Pie.

I ordered a Dirty 3-Olive Martini. I like vodka martinis and usually have them with cocktail onions; obviously there are minimal carbs. But I thought I would be adventurous. I like olives, but I do NOT like sipping or drinking the brine from the jar of olives. Period. I do NOT like dirty martinis.

And I had to try a dessert – Black and Tan Sundae. My early morning blood sugar went up, of course, but only by 4 points to 106 mg/dL.

My net count was a slight drop by 4 points.

FSB – 106 ↓ down 110 (Normal range 100 – 125 mg/dL)
A1c – 5.36 ↓ down 5.37 (Normal range 5.7 – 6.4 %)
eAG – 107.2 ↓ down 107.5 (Normal range 117 – 137 mg/dL)

JGE 70 – FBS Down 14 Points – Pan Seared Swordfish and Roasted Vegetables

Good Day,


My early morning blood sugar count reduced by 14 points to 110 mg/dL.




Supper menu last night Pan-seared Swordfish and Roasted, Potatoes, Parsnips, Brussel Sprouts, vegetables. B&J, of course, Double Fudge Ice Cream.



I could have had another complete serving.  Supper was so, so good.

Results –

FSB – 110 ↓ down 124 (Normal range 100 – 125 mg/dL)
A1c – 5.37 ≡ 5.37 (Normal range 5.7 – 6.4 %)
eAG – 107.5 ↑ up 107.4 (Normal range 117 – 137 mg/dL)

JGE 69 – FBS Up 12 Points – Had To Have Been The Ginger Ale and Pretzels

Good Day,

I had a craving for a late night Canada Dry Ginger Ale and a bowl of pretzels. Chalk up 101 grams of carbs.

My early morning blood sugar count increased 12 points to 124 mg/dL. I’m still just hanging in the normal range.





Last night’s supper Sake-Steamed Chicken and Kabocha Squash, Fried Rice, Sesame Oil Carrots. The nice thing about the Kabocha Squash is that I do not have to peel it and the skin is edible.




I used the bamboo steamer. And of course B&J Cherry Garcia Ice Cream.



Lunch was a couple of slices of homemade, fresh from the oven; the Bauermbrot with some White Cheddar Cheese.



You can see the basic No-Knead Bread recipe that I use on my Jim's Gotta Eat blog. This is the 24 hour version.

I also use the Turbo version from this guy Steve I found on YouTube.

I've started combining the two versions and I make my own Sourdough Starter. For the Bauermbrot I add about 1/2 cup of the sourdough starter and 1 teaspoon yeast.

And then I just substitute and add ingredients as I think that I would like to try.

A friend sent me the link to the Bauernbrot recipe and I just sort of substituted and adjusted it with the top two mentioned.

The bread was great.

A1c – 5.37 ≡ 5.37 (Normal range 5.7 – 6.4 %)

JGE 68 – FBS Up 24 Points – I Had A Craving For A Hot Dog

Good Day,

I was lazy last night. I had a craving for a hot dog for supper, and of course the one place that came to mind was Mel’s Hot Dogs on Busch Blvd. Mel’s has been a Tampa establishment for 43 years.   I really do like Mel's.

My order – Bratwurst Basket, with Fries and Coleslaw, and a Mighty Mel Hot Dog. And of course I had to have a bowl of B&J’s Double Fudge Brownie ice cream when I got home.

My early morning blood sugar count increased 24 points to 112 mg/dL. I’m still in what may appear to be in the normal range.

And I'm still NOT taking any diabetes medication.  And yes I am exercising regularly; check out Jim's Trek.

Okay, okay I have to make tonight’s supper Sake-Steamed Chicken and Kabocha Squash. I’ve got a couple of types of steamers but this recipe calls for a twist on the steaming process that I have never tried.

FSB – 112 ↑ up 88 (Normal range 100 – 125 mg/dL)
A1c – 5.37 ↑ up 5.36 (Normal range 5.7 – 6.4 %)
eAG – 107.3 ↑ up 107.1 (Normal range 117 – 137 mg/dL)

JGE 67 – FBS Down Another 7 Points – Grab and Eat

Good Day,


Yesterday was volunteer day and so it was my grab and eat day.

On my seize and go menu was Jerk Chicken, Boiled Cabbage and Carrots, a Chicken Salad sandwich, a bowl of Shrimp Ramen, a Dark Chocolate Bar, a bowl of B&J Cherries Garcia ice cream, and a helping of Archer Zen Party snacks.




Drum roll please -

I didn’t overdo it, and my results were good. My early morning blood sugar count dropped 7 points to 88 mg/dL.

It bloody hard to follow the Diabetes nutritionist’s suggestion of 6 small meals a day any day of the week, but reading the above was sort of a follow through.

Tonight’s supper Sake-Steamed Chicken and Kabocha Squash. I’ve got a couple of types of steamers but this recipe calls for a twist on the steaming process that I have never tried.

JGE 66 – FBS Down by 20 Points – Jai Ho Royale and Watercress Salad

Good Day,

It’s a knockdown this morning. My early morning blood sugar count dropped 20 points to 95 mg/dL.

Decided to have lunch at Jai Ho Royale on Fowler Avenue, and after four plates I figured that I would have a light supper of leftover Watercress and Cucumber and Radish Salad at home.

Whenever I have a craving for south Indian food and after I have pedaled it is much easier than spending the time in the kitchen fixing up all the different types of dishes that I know that I can get at Jai Ho Royale.

Sometimes a buffet can cause me to go into a food tail-spin, but not this time. I know that I could have had at least two more plates full. I was satiated and satisfied.



From I what can recollect, there was a Fresh Salad, Naan, Chicken Biryani, Dhal, Chicken Tikka Masala, Vegetable Goan Curry, Fried Eggplant, Tandoori Chicken, Chicken Tikka Masala, Goat Curry, Pakoras, Butter Chicken. And yes I always try everything.

Results –

FSB – 95 ↓ down 115
A1c – 5.37 ≡ no change 5.37
eAG – 107.3 ≡ no change 107.3

JGE 65 – FBS Up by 11 Points – Cheese Ravioli and Watercress Salad

Good Day,

The supper battle swings the other way this morning. My early morning blood sugar count went up 11 points to 115 mg/dL.



Supper menu was Cheese Raviolis and Crunchy Watercress, Cucumber & Radish Salad.

Bloody hell, not a knock out, but it was the Lays Baked Potato Chips; I dared to open a bag while watching a movie.

Results –




FSB – 115 ↑ up 104
A1c – 5.37 ↑ up 5.37
eAG – 107.2 ↑ up 107.3

JGE 64 – FBS Decreased by 10 Points – Minced Beef with Bok Choy, Fried Egg, and Rice

Good Day,

My supper battle continues...



Supper last night Minced Beef with Bok Choy and Fried Egg. Definitely a success on the supper battle count. Oh yeah, it is also called a Quick Thai Beef Bok Choy Rice Bowl,  sort of. And there’s a dollop of Mango Chutney on the plate.

My early morning blood sugar count dropped 10 points to 104 mg/dL. And I still had a couple of scoops of B&J Pistachio ice cream.

Results –

FSB – 104 down from 114
A1c – 5.36 down from 5.37
eAG – 107.2 down from 107.3

Tonight’s menu fare is Cheese Raviolis and Crunchy Watercress, Cucumber & Radish Salad.

I baked 2 No-Knead Loaves – Sourdough Raisin White Whole Wheat and Sourdough White. I’m trying something new with both my sourdough starter and yeast. I tell you what. It works.

Good Day,

Yes Making bread is almost a daily occurrence. The loaves also make good gifts...that is if they do not get eaten first.



And the making of the loaves has become a habit. Jim's gotta eat.

JGE 62 – FBS Up 7 Points – Anthony’s Wings and Pizza

Good Day,


My early morning blood sugar count increased 7 points to 114 mg/dL. It was Anthony’s Coal Fired Pizza Wings and Cauliflower Pizza, and of course the B&J Everything But The Kitchen Sink ice cream. I have a penchant for Anthony’s wings.

What can I say? And after baking bread the majority of the day I really did not feel like cooking supper.

But I truly can say that my favorite pizza in all the Tampabay area is Anthony’s Cauliflower Pizza…

My calculated A1c is at 5.36 (no change) and the eAG at 107.2 (no change). I’m gotta bring those down again. At January 1 they registered at 5.24 and 103.8, respectively.

And four loaves of No-Knead Turbo Bread were made - #115 White; #116 Raisin White Wheat; #s 117 and 118 Sourdough White –

Tonight I’m going to try, if I don’t feel too bloody lazy, Minced Beef with Bok Choy and Fried Egg. I wonder how that dish will affect the supper battle count.

JGE 61 – FBS Down By 13 Points – Asian Salad Chicken Soup

Good Day,

My early yesterday morning blood sugar recorded down 13 points to 107 mg/dL.



Supper last night – Watercress Bean Sprout Salad Chick Mushroom Soup. Ingredients – Watercress, Bean Sprouts, Chili Peppers, Sesame Oil, Vegetable Oil, Rice Wine Vinegar, Fish Sauce, Salt and Pepper, Chicken Breasts, Mushroom, Ginger, Water , and Black Sesame Seeds.



Another name Asian Salad Chicken Soup.  2nd bowl.



And it was tremendous and definite repeatable recipe. And easy, ever so easy to make. It was like making a Watercress and Bean Sprout Salad while making the Chicken Mushroom Soup. The Salad was put into a bowl and the Soup was poured over top. It was fresh, filling, and fabulous. And my early morning blood sugar decreased by 13 points.
