JGE 76 – FBS Up Net 19 Points – Baked Swai and Russet Potatoes

Good Day,


My early blood sugar count has climbed over the past couple of days by 19 points to 116 mg/dL.


Last night supper showdown menu – Baked Swai and Russet Potatoes with a Spinach, Tomato and Onion Salad. And no ice cream for dessert.




But I did have a late night snack of Crackers and Peppered Goat Cheese.

Baked Swai and Russet Potatoes was a tremendous meal.  Sliced Russet potatoes first baked and then the Swai filet placed on top.

Swai is the Vietnamese catfish as opposed to the type of catfish, the garbage scows and bottom eaters, which I used to catch, avoid the back fin spike and then throw them back in the water.

Swai cannot be legally marketed as catfish in the United States. The Southeastern Asia Swai can also be known as Shark Catfish…but they are not a shark. Confused? It’s Swai.

Beginning Monday I manage my supper menus and snacking habits, once again. Once diagnosed with Diabetes the management of my diet has been a consistent and continual redo and redo and redo.

Results –

FSB – 116 ↑ up 97 (Normal range 100 – 125 mg/dL)
A1c – 5.36 ↑ up 5.35 (Normal range 5.7 – 6.4 %)
eAG – 107.1 ↑ up 106.8 (Normal range 117 – 137 mg/dL)

JGE 75 – FBS Down 12 Points – Asian Sweet Chili Chicken and Steamed Bok Choy

Good Day,

My early blood sugar count went down by 12 points to 97 mg/dL.

Supper showdown menu – Asian Sweet Chili Chicken, Steamed Bok Choy and Rice.



The Chicken feature was done in the slow cooker. It sort of took on a look of an Asian pulled/shredded meat dish.



I didn’t have any Hoisin Sauce in the house so I substituted the same amount with Black Bean Garlic Sauce. Topping the rice it was somewhat a wee bit salty but the rice and the Steamed Bok Choy help to cut that down.

I obviously liked it as I had 2nd helpings.



And then again I did have a bowl of B&J with one cookie.

Lunch was a Ham and Swiss Sandwich with freshly baked White Sourdough Bread prepared and cooked a la Turbo No-Knead way.



Results –

FSB – 97 ↓ down 109 (Normal range 100 – 125 mg/dL)
A1c – 5.35 ≡ 5.35 (Normal range 5.7 – 6.4 %)
eAG – 106.8 ↓ down 106.9 (Normal range 117 – 137 mg/dL)

JGE 65 – FBS Up by 11 Points – Cheese Ravioli and Watercress Salad

Good Day,

The supper battle swings the other way this morning. My early morning blood sugar count went up 11 points to 115 mg/dL.



Supper menu was Cheese Raviolis and Crunchy Watercress, Cucumber & Radish Salad.

Bloody hell, not a knock out, but it was the Lays Baked Potato Chips; I dared to open a bag while watching a movie.

Results –




FSB – 115 ↑ up 104
A1c – 5.37 ↑ up 5.37
eAG – 107.2 ↑ up 107.3






Tonight’s supper Sake-Steamed Chicken and Kabocha Squash. I’ve got a couple of types of steamers but this recipe calls for a twist on the steaming process that I have never tried.

JGE 64 – FBS Decreased by 10 Points – Minced Beef with Bok Choy, Fried Egg, and Rice

Good Day,

My supper battle continues...



Supper last night Minced Beef with Bok Choy and Fried Egg. Definitely a success on the supper battle count. Oh yeah, it is also called a Quick Thai Beef Bok Choy Rice Bowl,  sort of. And there’s a dollop of Mango Chutney on the plate.

My early morning blood sugar count dropped 10 points to 104 mg/dL. And I still had a couple of scoops of B&J Pistachio ice cream.

Results –

FSB – 104 down from 114
A1c – 5.36 down from 5.37
eAG – 107.2 down from 107.3

Tonight’s menu fare is Cheese Raviolis and Crunchy Watercress, Cucumber & Radish Salad.

I baked 2 No-Knead Loaves – Sourdough Raisin White Whole Wheat and Sourdough White. I’m trying something new with both my sourdough starter and yeast. I tell you what. It works.
