JGE 103 – No-Knead Tally Increases – White Whole Wheat Raisin Flax and The Next 29 Loaves

Good Day,

Just took loaf #139 out of the oven. This time a White Whole Wheat Raisin Flax.



Here’s my condensed version of the recipe –

Ingredients –

1 c King Arthur’s White Whole Wheat Flour; 2 ½ c King Arthur’s White Flour; 1 ¼ t Yeast; 1 ½ t Salt; 1 T Honey; ¾ c Raisins; 5 ½ T Flax Seeds; and 13 oz lukewarm Water.

Mix.

1 ½ h 80°F, in oven, oven light on.

450°F. Pot and cover in oven to heat.

Dough in pot. 30 min covered. 15 min uncovered.

Loaf out of pot.

Thump. Cool. Eat.

Enjoy.

JGE 64 – FBS Decreased by 10 Points – Minced Beef with Bok Choy, Fried Egg, and Rice

Good Day,

My supper battle continues...



Supper last night Minced Beef with Bok Choy and Fried Egg. Definitely a success on the supper battle count. Oh yeah, it is also called a Quick Thai Beef Bok Choy Rice Bowl,  sort of. And there’s a dollop of Mango Chutney on the plate.

My early morning blood sugar count dropped 10 points to 104 mg/dL. And I still had a couple of scoops of B&J Pistachio ice cream.

Results –

FSB – 104 down from 114
A1c – 5.36 down from 5.37
eAG – 107.2 down from 107.3

Tonight’s menu fare is Cheese Raviolis and Crunchy Watercress, Cucumber & Radish Salad.

I baked 2 No-Knead Loaves – Sourdough Raisin White Whole Wheat and Sourdough White. I’m trying something new with both my sourdough starter and yeast. I tell you what. It works.


Food for thought - I am trying to control my diabetes with exercise and food.  I have eliminated all diabetes medication.  I am keeping my weight stable, and Jim's gotta eat.

JGE 63 – 22 More No-Knead Loaves – 110 Completed - More To Come

Good Day,

Yes Making bread is almost a daily occurrence. The loaves also make good gifts...that is if they do not get eaten first.



And the making of the loaves has become a habit. Jim's gotta eat.

JGE 58 – Now I Am Confused - FBS Up By 13 Points – It Wasn’t The Beans

Good Day,

My early yesterday morning blood sugar recorded up 13 points to 124 mg/dL.

Lunch was a Gyro and a small Greek Salad and a S‘mores Blizzard. Supper last night was a creation of White Kidney Beans and Chickpeas and 2 scoops of Rum Raisin ice cream.

Okay, okay I can see the residual effects of the Blizzard and the 2 scoops of Ice Cream. Medium S’mores Blizzard has 184 carbs. And I had 2 cups of the Beans…

Smith, use your head, but it was so, so good.

My calculated A1c is at 5.35 (no movement) and the eAG at 106.9 (up 1). Gotta work to bring those down again. At January 1 they registered at 5.24 and 103.8, respectively.

Not sure what I’m making what I’m making for supper, but please be assured I’m not going to starve.

JGE 57 – I Screwed UP - FBS Up By 26 Points – It Was The Pretzels

Good Day,

I screwed up, royally. The night before last at about 10:00 pm, an hour beyond my eating cut-off time, I grabbed the bag of Rold Gold Tiny Twist Pretzels from on top of the refrigerator.

I just could not stop eating; I sort of had a salt craving. 17 pretzels equal 23 grams of carbs… I didn’t stop at 17. I am sure that I wolfed down at least about 4-times single serving size, somewhere in the vicinity of 68 pretzels. My quick calculation approximates 92 grams of carbs.

And so I knocked myself out in my supper plus battle to reduce my FSB. My early yesterday morning blood sugar recorded up 26 points to 112 mg/dL. This morning’s FSB was down 1 point to 111.


Supper two nights ago was an “almost there” trial, and possibly error, at home – Deconstructed Stuffed Cabbage Rolls. I love Stuffed Cabbage, but just could not bring myself to spend the time to do what I would have to do to create all the rolled up Gołąbki or “pigeons”.   And yes the Deconstructed Stuffed Cabbage Rolls is a meal worth repeating.

Last night’s supper was leftover Shrimp Carbonara and fresh Romaine Salad. I supposed I could have avoided the early evening snack of Spicy Chicharrónes and Mexican Coca-Cola, but I have to have a Mexican Coke with a bag of Chicharrónes.

And I've got to keep repeating to myself "No more late evening snacks" "No more late night snacks"...

excepting the Cocktail Onions.

JGE 48 – 22 More No-Knead Loaves – 88 Done and There is More.

Good Day,

Friends asked me if I was still baking bread.

And my answer: "But of course!"

I have almost, 99.9%, stopped from buying bread anywhere...except if it comes in an already made sandwich or sub.

This morning I am currently making two more loaves - #'s 97 and 98; one White and one Sourdough.

This house, the Quilt SB sweatshop always smells of bread-baking.

And if you're lucky, and you visit, you may walk away with a loaf under your wing.
