JGE 51 – Another Drop – Shrimp Carbonara Reduces FBS By 7 Points

Good Day,

Last night’s supper dropped 7 points to my early morning blood sugar take. My FBS is 104 mg/dL.

Menu was a good, not necessarily great, Shrimp Carbonara and Sourdough Bread Pudding. I can be my own critic, and don’t get me wrong I did have a double helping of the Shrimp Carbonara. The question is whether the last two suppers are actually the cause of the loss of a combined 29 points over two days? Not sure.

My calculated A1c is at 5.38 (down 0.01) and the eAG at 107.8 (down 0.1). Gotta work to bring those down again. At January 1 they registered at 5.24 and 103.8, respectively.

And today I try to make a new version of Sourdough Bread… Fred, that’s my starter has been prepped and has been fed three times. This time I’ve got to knead the dough for 20 minutes, and there is a longer time proofing. Will see what happens. Oh yeah, I think this will be Loaf #111.

Tonight's supper more than likely leftovers, gonna try a Frittata di pasta with leftover pasta, of course...and Sourdough Bread Pudding.  Tune in tomorrow to Jim’s Gotta Eat to see the comparison of the results...and the set up a new Supper Showdown.

Food for thought - I am trying to control my diabetes with exercise and food.  I have eliminated all diabetes medication.  I am keeping my weight stable, and Jim's gotta eat. Enjoy.

JGE 50 – A Drop of 22 Points – Swordfish+ Pins Down Steak ‘n Shake

Good Day,



The Swordfish+ supper dropped 22 points on my early morning blood sugar takedown yesterday. My FBS is 111 mg/dL.



Going up against the Swordfish+ supper last night was Shrimp Carbonara.

JGE 49 - The Start of A Supper Showdown - Steak 'n Shake versus Swordfish+

Good Day,

Lazy cook destroys blood sugar battle –

Last night's Steak ‘n Shake meal:

4 Shooters;
2 Chicago-Style Franks;
Sea Salt ‘n Cracked Pepper Seasoned Fries;
and a Dark Chocolate Chip Shake, w/o whipped cream.

And a late evening bowl of Trail Mix.

Early morning blood sugar count jump 20 points to 133.

Tonight’s proposed supper menu –

Cracked Pepper Swordfish Steaks;
Roasted Zucchini and Onions;
Parmesan Potatoes;
and 2 scoops of B&J Chocolate Fudge Brownie.

JGE 48 – 22 More No-Knead Loaves – 88 Done and There is More.

Good Day,

Friends asked me if I was still baking bread.

And my answer: "But of course!"

I have almost, 99.9%, stopped from buying bread anywhere...except if it comes in an already made sandwich or sub.

This morning I am currently making two more loaves - #'s 97 and 98; one White and one Sourdough.

This house, the Quilt SB sweatshop always smells of bread-baking.

And if you're lucky, and you visit, you may walk away with a loaf under your wing.

JGE 47 – 22 More No-Knead Loaves – 66 A Habit Has Been Formed

Good Day,

Yes I have completed my habit forming challenge. I now have a No-Knead Bread habit.



I started this personal challenge on July 4th this past year and it has taken me 5 months to complete.

JGE 46 - No-Knead Breads - NOT A Fail. Period.

Good Day,

In JGE 45 I wrote that I thought my attempts, because of my screw-ups may have caused my new No-Knead loaves to have bombed.



Two loaves of bread fresh from the oven; White (left) and Whole Wheat Sourdough (right). Both No-Knead loaves #54 and #55.

Well I can say that # 54, a White loaf did NOT fail Period.



I thought I screwed up when I was baking the bread, but lunch certainly proved me wrong.



Lunch sandwich – Fresh slices from Loaf #54, Pork, Provolone, Pickles, and Mustard. Maybe I will succeed in this No-Knead Artisan Bread challenge.



And so the first tasting is done. Definitely not a loss. Next #55.
