JGE 79 – FBS Down 4 Points – Chicken, Chinese Eggplant, Carrot Stir-Fry

Good Day,

Four (4) points down to 108 mg/dL, early morning blood sugar count. Slowly but surely without a spike in either direction. This is good. The supper showdown continues.



Supper last night was Chicken Breast stir-fried with Chinese Eggplant, Baby Bok Choy Tips, Carrots and Garlic. I thought I was going to be making a repeat from the night before but this time the tastes were very, very different.

Carb count – Chicken Breast = 0 grams; Eggplant = 4.8 grams; Carrot = 6 grams; Baby Bok Choy = 1.8 grams; Garlic = 1.8 grams; Sauce = 10.0 grams; Hoshi Maru Udon Noodles = 36 grams; Total ≈ 58.6 grams.



And my B&J’s Karmel Sutra Core; 1 cup is about 64 carbs.

Total carbohydrate count last night approximates 122.6 grams.



Looks like I should be staying away from the B&J but I am weak. Yes I do exercise, continually 6 days a week. Can you imagine what my numbers may be if I didn’t exercise? And I am still not taking any diabetes medications. I’m counting carbs in my supper showdown.

Results –

FSB – 108 ↓ down 112 (Normal range 100 – 125 mg/dL)
A1c – 5.37 ≡ 5.37 (Normal range 5.7 – 6.4 %)
eAG – 107.4 ≡ 107.4 (Normal range 117 – 137 mg/dL)

JGE 78 – FBS Down Another 2 Points – Chicken, Broccoli and Soba Noodles

Good Day,

Down another 2 points. Early morning blood sugar count at 112 mg/dL. This is the direction I want it to go, downward.



Supper last night was Stir-Fried Chicken, Broccoli and Soba (Spelt) Noodles. The supper was fabulous and it is something that I would make again…and again, and again. Everything from scratch excepting the Spelt Soba Pasta, which was from Québec, Canada.


It was the amount that I downed. The dish was so good that I ate about 2 helpings. And one helping has about 37 grams of carbs, but the chicken and the broccoli probably was minimal. On the other hand the sauce was made with Soya Sauce, Oyster Sauce, Garlic Ginger, Banana Pepper Sauce, Brown Sugar which approximated 15.9 carbs. 10 grams for the Broccoli and 0 the Chicken Thighs. So my double helping may have targeted around 125.8 grams of carbohydrates.

Of course there was the B&J’s Cherry Garcia. 1 cup is about 56 carbs.

And hell what do you know? I’m counting carbs in my supper showdown.  Last night = 181.8 grams.

Results –

FSB – 112 ↓ down 114 (Normal range 100 – 125 mg/dL)
A1c – 5.37 ≡ 5.37 (Normal range 5.7 – 6.4 %)
eAG – 107.4 ↑ up 107.3 (Normal range 117 – 137 mg/dL)

Tonight I'm going to try something with Chicken Breasts, Eggplant, and Carrots.

JGE 77 – FBS Down Net 2 Points – Shrimp and Grits

Good Day,

Well kiss my grits. Supper last night, Baked Shrimp and Cheddar Onion Grits with a side salad Iceberg Lettuce and Zucchini with Balsamic Vinegar Dressing. And even though my early morning blood sugar went down a net of 2 points over the weekend they went up 4 points as compared to the supper from the night before.




The Shrimp and Grits were great. Period. They were so, so good. Grits rate 1 cup to about 31 grams of carbs. And I think that as I had about 2 servings and 3 cups of grits I may have eaten 93 grams of carbs.

“While grits do have an effect on blood sugar, when eaten as part of a balanced diet, they should not cause high blood sugars…As long as you don't exceed the ½-cup serving size, grits should not raise your blood sugar.”

Well I guess I’m not going to survive on only one ½ cup, I think I had 6 halves. And everything else that Jill Corleone's article states about butter, bacon, whole milk (I used Half and Half) that I should have cut back on and create wall-paper paste, I didn’t. So I liked my Shrimp and Grits.

A1c – 5.37 ↑ up 5.36 (Normal range 5.7 – 6.4 %)

JGE 76 – FBS Up Net 19 Points – Baked Swai and Russet Potatoes

Good Day,


My early blood sugar count has climbed over the past couple of days by 19 points to 116 mg/dL.


Last night supper showdown menu – Baked Swai and Russet Potatoes with a Spinach, Tomato and Onion Salad. And no ice cream for dessert.




But I did have a late night snack of Crackers and Peppered Goat Cheese.

Baked Swai and Russet Potatoes was a tremendous meal.  Sliced Russet potatoes first baked and then the Swai filet placed on top.

Swai is the Vietnamese catfish as opposed to the type of catfish, the garbage scows and bottom eaters, which I used to catch, avoid the back fin spike and then throw them back in the water.

Swai cannot be legally marketed as catfish in the United States. The Southeastern Asia Swai can also be known as Shark Catfish…but they are not a shark. Confused? It’s Swai.

Beginning Monday I manage my supper menus and snacking habits, once again. Once diagnosed with Diabetes the management of my diet has been a consistent and continual redo and redo and redo.

Results –

FSB – 116 ↑ up 97 (Normal range 100 – 125 mg/dL)
A1c – 5.36 ↑ up 5.35 (Normal range 5.7 – 6.4 %)
eAG – 107.1 ↑ up 106.8 (Normal range 117 – 137 mg/dL)

JGE 75 – FBS Down 12 Points – Asian Sweet Chili Chicken and Steamed Bok Choy

Good Day,

My early blood sugar count went down by 12 points to 97 mg/dL.

Supper showdown menu – Asian Sweet Chili Chicken, Steamed Bok Choy and Rice.



The Chicken feature was done in the slow cooker. It sort of took on a look of an Asian pulled/shredded meat dish.



I didn’t have any Hoisin Sauce in the house so I substituted the same amount with Black Bean Garlic Sauce. Topping the rice it was somewhat a wee bit salty but the rice and the Steamed Bok Choy help to cut that down.

I obviously liked it as I had 2nd helpings.



And then again I did have a bowl of B&J with one cookie.

Lunch was a Ham and Swiss Sandwich with freshly baked White Sourdough Bread prepared and cooked a la Turbo No-Knead way.



Results –

FSB – 97 ↓ down 109 (Normal range 100 – 125 mg/dL)
A1c – 5.35 ≡ 5.35 (Normal range 5.7 – 6.4 %)

JGE 74 – FBS Up 6 Points – It Was The Snacking

Good Day,

My early blood sugar count increased by 6 points to 109 mg/dL.


Supper last night was not the cause of my FSB increase. And it wasn’t the straight up Vodka Martini with 6 olives. There’s about 3 carbs, give or take, from the Vermouth and the Olives.

It was the snack of Trail Mix of Cashews, Almonds, and CranRaisins (1/2 cup = 33 ½ grams) and the late night snack of Crackers and Cottage Cheese. 1 Cracker and Cottage Cheese is about 13.6 grams; I had about 12. 12 times equals 136.2 grams of carbohydrates. Bloody hell!

I had a craving. Period.

Supper was a quick and easy Harlequin Chicken with a small side of Spring Potatoes and a Spinach Cucumber and Onion Salad. I can almost guarantee that the carb count would have been reasonable.




And then again I did have a bowl of B&J with one cookie.

FSB – 109 ↑ up 103 (Normal range 100 – 125 mg/dL)
A1c – 5.35 ≡ 5.35 (Normal range 5.7 – 6.4 %)

JGE 73 – FBS Down Then Up 5 Points – 4 Rivers Smokehouse and Shrimp Salad

Good Day,

My early blood sugar count increased by 6 points to 103 mg/dL, but believe it or not I am headed in the right direction as compared to my last post on Friday past. My FSB then was 108 mg/dL.

And this past weekend was a variety of different foods on the plate menu; the way that I like it.


From 4 Rivers Smokehouse – Smoked Sausage, Dark Bits, French Fries, Smoked Jalapeños, and Fried Pickles and for dessert a Spotted Cow. But I paced myself and even had a small container of leftovers to take home. My early morning blood sugar the next day had dropped 11 points.



Sunday supper was a Shrimp Salad with Olive Oil and Balsamic Vinegar Dressing. Ingredients – Shrimp; the leftover Smoke Sausage, Cucumber, Celery, Onion, Green Onion, Radishes, Spinach, Salt and Pepper. Dessert, of course, the B&J’s Ice Cream.



Late night snack – Some Zen Mix and a Canada Dry Ginger Ale. There’s the uptick on my numbers, the Ginger Ale – 12 ozs = 33 grams of carbs. My numbers increased this morning by 6 points. And did I say that I cannot abide, like or relish diet soft-drinks. I do not like the after taste or the chemicals.



And overall my A1c and eAG are headed in a downward trend, ever so slowly…but that’s the way I like it.

FSB – 103 ↓ down 108 (Normal range 100 – 125 mg/dL)
A1c – 5.35 ↓ down 5.36 (Normal range 5.7 – 6.4 %)
eAG – 106.8 ↓ down 107.1 (Normal range 117 – 137 mg/dL)
