JGE 94 – FBS Net Decrease 17 Points – Frozen Leftovers

Good Day,

My early morning fasting blood sugar count has decreased a total of 17 points over these past 2 days. I recorded 99 mg/dL.

And I did not have any late night caffeine. I nixed the late night coffee and it appears that that may have to, in my truly unscientific analysis, been the cause of my 2 days’ hits and increases in my early morning sugar.

Last night for supper I decided that I would clean out those half-opened packages of frozen things sitting in the freezers. Supper included –

Vegetable Samosas. Carb count ≈ 56 grams.

Pork & Shrimp Egg Rolls. Carb count ≈ 48 grams.

Waffle Fries. Carb count ≈ 45 grams.

Iceberg Salad with Blueberry Balsamic Vinegar Dressing. Carb count ≈ 6 grams.

Yes I had a couple of scoops of Breyers Samoas ice cream. Carb count ≈ 34 grams.

This was a desperation supper.  I was desperate to eat, and I did not feel like spending anytime preparing and cooking anything.

Total carb count, somewhere in the vicinity of 189 grams.

Results –

FSB – 99 ↓ down 116 (Normal range 100 – 125 mg/dL)
A1c – 5.37 ≡ 5.37 (Normal range 5.7 – 6.4 %)
eAG – 107.3 ↓ down 107.4 (Normal range 117 – 137 mg/dL)

Tune in tomorrow to Jim’s Gotta Eat to see the comparison of the results...and the set up a new Supper Showdown.

Food for thought – Try not to eat too late in the evening. Manage the amount of food that I eat. Do not over eat because my eyes see good food.

I am trying to control my diabetes with exercise and food. I have eliminated all diabetes medication. I am keeping my weight stable, and Jim's gotta eat.

Enjoy.

JGE 93 – FBS Increases 8 Points – Szechuan Shrimp Ramen Noodle Bowl and Late Night Coffee?

Good Day,

My early morning fasting blood sugar count increased today by 8 points to 116 mg/dL. That's 2 days in a row.

Last night supper was sort of mistake. I was looking forward to making a Shrimp Szechuan Noodle dish.

I had a package of Ching’s Secret Schezwan Instant Noodles. I bought the package at the local Patel Brothers Indian Grocery store, one of my favorite stores.

I thought this was a package of noodles. It was noodles, but another form of Ramen noodles. You know the squares of pasty noodles with the clever little packages of ground spices and various chemicals. I certainly didn’t understand the Arabic instructions on the back of the package.

And so I thought, as I had already opened the package, why not make a Shrimp Szechuan Noodle Bowl. Ingredients – Ching’s Secret Schezwan Noodles, Shrimp, Baby Bok Choy, Cilantro, Onion, Chicken Broth, and the contents of the little silver surprise packages.

And yes, the Noodle Bowl was delicious...

Ching’s Secret Schezwan Noodles. Carb count ≈ 90 grams.

Shrimp. Carb count ≈ 1 gram.

Bok Choy. Carb count ≈ 1.5 grams.

Cilantro. Carb count ≈ 0.1 grams.

Onion. Carb count ≈ 10 grams.

Chicken Broth. Carb count ≈ 1 gram.

Yes I had a couple of scoops of B&J Phish Food. Carb count ≈ 78 grams.

I had a late night snack of Cheese and Crackers. Carb count ≈ 25 grams.

And a late night Coffee with Half and Half and Sugar. Carb count ≈ 7 grams.

Total carb count, somewhere in the vicinity of 212.6 grams.

Results –

FSB – 116 ↑ up 108 (Normal range 100 – 125 mg/dL)
A1c – 5.37 ≡ 5.37 (Normal range 5.7 – 6.4 %)
eAG – 107.4 ↑ up 107.3 (Normal range 117 – 137 mg/dL)

Question – Does the late night coffee, of the last two nights, cause an increase in my early morning blood sugar count?

From Diabetes Self-Management – The Mystery of Coffee and Diabetes, David Spero, March 2011.

"So right there you have a disagreement about caffeine. Meanwhile, other studies have shown that coffee, or the caffeine in coffee, raises after-meal (postprandial) blood glucose levels up to 20% in people with diabetes. These studies have not been large but have received a lot of attention. In the most-reported study, from Duke University, ten subjects, all with diabetes, were tested — given either caffeine capsules or a placebo (inactive treatment), then switched to the other type of capsules. All showed higher blood glucose levels on the days they took caffeine."

Okay, okay it was only 2 nights of late night coffee. Guess what? I think I’ll nix the late coffee and see what the effects are.

No, I’m not going to cut out the couple of scoops of ice-cream. I understand those.

JGE 92 – FBS Increase 8 Points – Once It Tastes Like Cardboard, Stop!

Good Day,

My early morning fasting blood sugar count registered at 108 mg/dL. It was an increase from the previous morning.

From my copy of America’s Test Kitchen’s The Complete Cooking For Two Cookbook I followed the recipe for Thai Chicken with Basil; (page 119).

Supper last night – Thai Chicken with Basil on Rice and Thai Cucumber Salad with Peanuts.

Thai Chicken with Basil. Carb count ≈ 2 grams.

Basmati Rice. Carb count ≈ 40 grams.

Thai Cucumber Salad with Peanuts. Carb count ≈ 21 grams.

Yes I had a couple of scoops of B&J Phish Food. Carb count ≈ 78 grams.

I had a craving for these new Nabisco Good Thin Sweet Potato and Chickpea Garlic & Herb Crackers. I couldn’t stop shoveling them into my mouth. The crackers were so small and so light. Good but after the point of no return they began to taste a little like cardboard. I should have stopped. Carb count ≈ 88 grams.

And a late night Coffee with Half and Half and Sugar. Carb count ≈ 7 grams.

Total carb count, somewhere in the vicinity of 236 grams.

Results –

FSB – 108 ↑ up 100 (Normal range 100 – 125 mg/dL)
A1c – 5.37 ≡ 5.37 (Normal range 5.7 – 6.4 %)

JGE 90 – FBS Decrease 7 Points – Pseudo Chicken Waldorf Salad

Good Day,

This morning I recorded a decrease of 7 points to 100 mg/dL to my early morning blood sugar count. And that’s the positive news…

Last I decided with some left over Rotisserie Chicken, a couple of Apples, Iceberg Lettuce, Tomato, Onion, Celery, Plain Yogurt, Mayonnaise, and Walnuts to make a quick and pseudo Chicken Waldorf Salad.

I didn’t take an image of the supper concoction I made, so I “borrowed” the one from Watching What I Eat who in turn “borrowed" it from America’s Test Kitchen.

And I didn’t have any grapes (-13 grams of carbs)… that’s the thought behind the substitute of tomato (+ 10 grams of carbs) and onion (+ 10 grams of carbs).

Chicken Waldorf Salad. Carb count ≈ 53 grams.

And I can’t forget a couple of scoops of B&J Phish Food. Carb count ≈ 78 grams.

Total carb count, somewhere in the vicinity of 131 grams.

Results –

FSB – 100 ↓ down 107 (Normal range 100 – 125 mg/dL)
A1c – 5.37 ≡ 5.37 (Normal range 5.7 – 6.4 %)
eAG – 107.3 ↓ down 107.4 (Normal range 117 – 137 mg/dL)

Tune in tomorrow to Jim’s Gotta Eat to see the comparison of the results...and the set up a new Supper Showdown.

Tonight's possible supper menu - Thai Chicken with Basil and Spicy Thai Cucumber Salad.

Food for thought – My numbers are not based on any critical scientific measurements.  I just Google search the dishes and the ingredients to come up with my approximate.  Seems to do the trick for the controlling of the numbers.

I am trying to control my diabetes with exercise and food. I have eliminated all diabetes medication. I am keeping my weight stable, and Jim's gotta eat.
