Good Day,
This morning I recorded a decrease of 7 points to 100 mg/dL to my early morning blood sugar count. And that’s the positive news…
Last I decided with some left over Rotisserie Chicken, a couple of Apples, Iceberg Lettuce, Tomato, Onion, Celery, Plain Yogurt, Mayonnaise, and Walnuts to make a quick and pseudo Chicken Waldorf Salad.
I didn’t take an image of the supper concoction I made, so I “borrowed” the one from Watching What I Eat who in turn “borrowed" it from America’s Test Kitchen.
And I didn’t have any grapes (-13 grams of carbs)… that’s the thought behind the substitute of tomato (+ 10 grams of carbs) and onion (+ 10 grams of carbs).
Chicken Waldorf Salad. Carb count ≈ 53 grams.
And I can’t forget a couple of scoops of B&J Phish Food. Carb count ≈ 78 grams.
Total carb count, somewhere in the vicinity of 131 grams.
Results –
FSB – 100 ↓ down 107 (Normal range 100 – 125 mg/dL)
A1c – 5.37 ≡ 5.37 (Normal range 5.7 – 6.4 %)
eAG – 107.3 ↓ down 107.4 (Normal range 117 – 137 mg/dL)
Tune in tomorrow to Jim’s Gotta Eat to see the comparison of the results...and the set up a new Supper Showdown.
Tonight's possible supper menu - Thai Chicken with Basil and Spicy Thai Cucumber Salad.
Food for thought – My numbers are not based on any critical scientific measurements. I just Google search the dishes and the ingredients to come up with my approximate. Seems to do the trick for the controlling of the numbers.
I am trying to control my diabetes with exercise and food. I have eliminated all diabetes medication. I am keeping my weight stable, and Jim's gotta eat.
Enjoy.

(Yes, MW, LD, and MCB I made my own Buttermilk Caesar Dressing.)
Actually wasn’t bad. I had two helpings. And some freshly baked Whole Wheat Rye Bread.

Romaine Lettuce. Carb count ≈ 3 grams.
Tomato and Onion. Carb count ≈ 7.5 grams.
Mojo Pork. Carb count ≈ 4.5 grams.

Tune in tomorrow to Jim’s Gotta Eat to see the comparison of the results...and the set up a new Supper Showdown.

Oh yeah, the numbers are an approximate and I use them as a guide. This Smith is not a biochemist nor a microbiologist.
I am trying to control my diabetes with exercise and food. I have eliminated all diabetes medication. I am keeping my weight stable, and Jim's gotta eat.

JGE 85 – FBS Decrease 14 Points – Happy Fish Tampa
Good Day,
This morning I recorded a decrease of 14 to 112 mg/dL to my early morning blood sugar count. Whew! Thank you Happy Fish Tampa.
Last night I was leary of what I should eat for my Supper Showdown to help reduce my blood sugar from the day before. And I didn’t want to eat rabbit food or starve myself. I wanted a good, reasonable seafood meal, and I did not want to cook or spend an arm and a leg.
I found, according to Yelp’s rating, the number 1 ranked seafood restaurant in Tampa, Happy Fish. It is listed as and cites itself as an “Authentic Peruvian Cuisine” and a “Peruvian Fusion”. Well I am definitely glad I found it.
The service was very, very, very good. Period. And the menu choices were good, obviously. I didn’t overeat but could easily have.
My early blood sugar recorded a decrease of 14 points, and I am back in the normal range at 112 ms/dL. Thank you Happy Fish.
I shared Ceviche Mixto. Carb count ≈ 25 grams.
I shared Lomo Saltado. Carb count ≈ 42 grams.
I shared Chaufa Especial con Pollo. Carb count ≈ 49 grams.
I had 2 of 5 Picarones. Carbs ≈ 91 grams.
Total carbohydrate count last night approximates 207 grams.

JGE 84 – FBS Increase 18 Points – Crispers’ Reuben Sandwich
Good Day,
This morning I recorded an increase of 18 to 126 mg/dL to my early morning blood sugar count.
Danger, Danger Will Robinson!. Blood sugar above the normal range.
Last night’s supper, (I didn’t cook), was Crispers’ cup of Kickin’ Crab Chowder and a Reuben Sandwich, and a bag of Kettle Chips.
I was frustrated and exhausted. I had to remove two 15+ years growth of golden bamboo clumps from the front yard. An anonymous someone reported an issue of line of sight to the Hillsborough County Code Enforcement Department.
I also had a can of San Pellegrino Blood Orange Soda. And of course my bowl of ice-cream
Whole Reuben Sandwich. Carb count ≈ 72 grams.
Cup Kickin’ Crab Chowder. Carbs ≈ 17 grams.
Bag of Kettle Chips. Carbs ≈ 17 grams.
Can of San Pellegrino Blood Orange Soda. Carbs ≈ 33 grams.
And of course, Breyers Girl Scouts Samoas Ice Cream. Carbs ≈ 42 grams.
Total carbohydrate count last night approximates 181 grams.
And I love Reuben sandwiches...

A1c – 5.37 ↑ up 5.36 (Normal range 5.7 – 6.4 %)

JGE 82 – FBS Up Net 9 Points – Pizza in a Bowl
Good Day,
I haven’t posted anything to any of my blogs these past couple of days due to a misfortune and tragedy in the family.
Last night I wanted something to cook as quickly as I could. And I did not want to order out or go out. I decided upon Pizza in a Mug.
This morning I recorded a net increase of 9 to 117 mg/dL to my early morning blood sugar count.
I found Gemma’s Mug Pizza.
And of course I had to substitute a number of items.
I didn’t have All Purpose Flour. I substituted Bread Flour
I didn’t have Milk. I substituted Half & Half.
I didn’t have Marinara Sauce. I substituted Sofrito.
I didn’t have Mozzarella Cheese. I substituted a mixture of 5 Italian Shredded Cheeses.
I didn’t have Mini Pepperoni. I substituted sliced Ham.
And I doubled the size of the recipe.
Not bad. Tasted more like a Biscuit with sort-of Pizza Topping. Carb count ≈ 54 grams.
And of course I had Blue Bunny Cherry Pickin’ Chocolate with 2 cookies. Carbs ≈ 68 grams.
Total carbohydrate count last night approximates 122 grams.
Results –
FSB – 117 ↑ up 108 (Normal range 100 – 125 mg/dL)
A1c – 5.36 ≡ 5.36 (Normal range 5.7 – 6.4 %)

“A stagecoach passed by on the road and went on;
And the road didn’t become more beautiful or even more ugly.
That’s human action on the outside world.
We take nothing away and we put nothing back, we pass by and we forget;
And the sun is always punctual every day.”

JGE 81 – FBS Down 2 Points – Phred Over Ate and Flippers Pizza
Good Day,
It's alive! I over-fed Phred yesterday.
Phred is my sourdough starter, the one I began in about October 2015.
My rule of thumb – In the refrigerator: feed Phred once a week; Out of the refrigerator: feed Phred twice a day. And I usually feed Phred somewhere between ¼ and ½ cup of flour with about the same amount of water.
Well guess what? Phred’s on the kitchen counter and it’s a bubbling. It's gurgling. It's making noises. I overfed Phred. (AB took the photo.)
I use somewhere between ¼ and ½ cup of Phred – sourdough starter, as one of the ingredients in my No-Knead Turbo bread recipes.
And oh yeah, I’m making 2 loaves of bread today.
I decided that I really did not want to cook supper last night. This morning I recorded a decrease of 2 to 108 mg/dL to my early morning blood sugar count.
Supper last night was Caprese Di Arugula and 4 slices from two pizzas: Arugula & Prosciutto and Deluxe from Flippers Pizzeria in Carrollwood. Flippers is one of my two go-to pizzerias, and they deliver.
Caprese Di Arugula – Fresh mozzarella, Roma tomatoes, extra virgin olive oil and fresh basil served on arugula drizzled with Balsamic dressing. Carb count ≈ 7 grams
Arugula & Prosciutto Pizza – Fresh mozzarella, gorgonzola, pine nuts & prosciutto topped with Arugula, extra virgin olive oil, fresh squeezed lemon & asiago. Carb count ≈ 64 grams
Deluxe Pizza – Pepperoni, sweet Italian sausage, green peppers, red onions & mushrooms. Carb count ≈ 28 grams
Total carbohydrate count last night approximates 99 grams.
Results –

JGE 80 – FBS Net Up 2 Points – Teriyaki Shrimp and Bok Choy Stir-Fry Plus
Good Day,
It has been 5 days since I wrote up my supper showdown statistics and this morning I recorded a net increase of 2 points to 110 mg/dL; my early morning blood sugar count.
Supper last night was Teriyaki Shrimp and Bok Choy with Roasted Kabocha Squash. A small snack of pretzels…and then I had a late night craving for a Jamaican Patty.
My last night's carb count – Shrimp = 0.9 grams; Baby Bok Choy = 3 grams; Teriyaki Sauce = 11.5 grams; Kabocha Squash = 7 grams; Total ≈ 22.4 grams. ½ cup of Pretzels = 18 grams and 1 Jamaican Patty; 1 beef patty equals 16 carbs.
Total carbohydrate count last night approximates 56.4 grams.
Results –
FSB – 110 ↑ up 108 (Normal range 100 – 125 mg/dL)
A1c – 5.36 ↓ down 5.37 (Normal range 5.7 – 6.4 %)
eAG – 107.2 ↓ down 107.4 (Normal range 117 – 137 mg/dL)
Tune in tomorrow to Jim’s Gotta Eat to see the comparison of the results...and the set up a new Supper Showdown.
Food for thought - I am trying to control my diabetes with exercise and food. And I suppose the milkshake or extra snacking during the day can cause spikes in my blood sugar counts. I have eliminated all diabetes medication. I am trying to keep my weight stable. Controlling my diabetes seems to be a full-time job...and Jim's gotta eat.
Did I ever say that I love food.
Enjoy.

Supper last night was Teriyaki Shrimp and Bok Choy with Roasted Kabocha Squash. A small snack of pretzels…and then I had a late night craving for a Jamaican Patty.
A Jamaican Patty is sort of like an Empanada and sort of like a Beef Pasty and can be substituted for a hamburger. But here's the carbohydrate comparison:
Jamaican Beef Patty = 16 grams
Beef Empanada = 28 grams
Beef Pasty = 46 grams
Wendy's Hot 'N Juicy 1/4 lb Single Hamburger = 42 grams
Guess what? Think I will stick with my Jamaican Beef Patties.
My last night's carb count – Shrimp = 0.9 grams; Baby Bok Choy = 3 grams; Teriyaki Sauce = 11.5 grams; Kabocha Squash = 7 grams; Total ≈ 22.4 grams. ½ cup of Pretzels = 18 grams and 1 Jamaican Patty; 1 beef patty equals 16 carbs.

JGE 79 – FBS Down 4 Points – Chicken, Chinese Eggplant, Carrot Stir-Fry
Good Day,
Four (4) points down to 108 mg/dL, early morning blood sugar count. Slowly but surely without a spike in either direction. This is good. The supper showdown continues.
Supper last night was Chicken Breast stir-fried with Chinese Eggplant, Baby Bok Choy Tips, Carrots and Garlic. I thought I was going to be making a repeat from the night before but this time the tastes were very, very different.
Carb count – Chicken Breast = 0 grams; Eggplant = 4.8 grams; Carrot = 6 grams; Baby Bok Choy = 1.8 grams; Garlic = 1.8 grams; Sauce = 10.0 grams; Hoshi Maru Udon Noodles = 36 grams; Total ≈ 58.6 grams.
And my B&J’s Karmel Sutra Core; 1 cup is about 64 carbs.
Total carbohydrate count last night approximates 122.6 grams.
Looks like I should be staying away from the B&J but I am weak. Yes I do exercise, continually 6 days a week. Can you imagine what my numbers may be if I didn’t exercise? And I am still not taking any diabetes medications. I’m counting carbs in my supper showdown.

JGE 78 – FBS Down Another 2 Points – Chicken, Broccoli and Soba Noodles
Good Day,
Down another 2 points. Early morning blood sugar count at 112 mg/dL. This is the direction I want it to go, downward.
Supper last night was Stir-Fried Chicken, Broccoli and Soba (Spelt) Noodles. The supper was fabulous and it is something that I would make again…and again, and again. Everything from scratch excepting the Spelt Soba Pasta, which was from Québec, Canada.
It was the amount that I downed. The dish was so good that I ate about 2 helpings. And one helping has about 37 grams of carbs, but the chicken and the broccoli probably was minimal. On the other hand the sauce was made with Soya Sauce, Oyster Sauce, Garlic Ginger, Banana Pepper Sauce, Brown Sugar which approximated 15.9 carbs. 10 grams for the Broccoli and 0 the Chicken Thighs. So my double helping may have targeted around 125.8 grams of carbohydrates.
Of course there was the B&J’s Cherry Garcia. 1 cup is about 56 carbs.
And hell what do you know? I’m counting carbs in my supper showdown. Last night = 181.8 grams.
Results –
FSB – 112 ↓ down 114 (Normal range 100 – 125 mg/dL)
A1c – 5.37 ≡ 5.37 (Normal range 5.7 – 6.4 %)

JGE 77 – FBS Down Net 2 Points – Shrimp and Grits
Good Day,
Well kiss my grits. Supper last night, Baked Shrimp and Cheddar Onion Grits with a side salad Iceberg Lettuce and Zucchini with Balsamic Vinegar Dressing. And even though my early morning blood sugar went down a net of 2 points over the weekend they went up 4 points as compared to the supper from the night before.
The Shrimp and Grits were great. Period. They were so, so good. Grits rate 1 cup to about 31 grams of carbs. And I think that as I had about 2 servings and 3 cups of grits I may have eaten 93 grams of carbs.
From LiveStrong.com I read “Grits & High Blood Sugar”
Well I guess I’m not going to survive on only one ½ cup, I think I had 6 halves. And everything else that Jill Corleone's article states about butter, bacon, whole milk (I used Half and Half) that I should have cut back on and create wall-paper paste, I didn’t. So I liked my Shrimp and Grits.
Results –
FSB – 114 ↓ down 116 (Normal range 100 – 125 mg/dL)
A1c – 5.37 ↑ up 5.36 (Normal range 5.7 – 6.4 %)
eAG – 107.3 ↑ up 107.3 (Normal range 117 – 137 mg/dL)
And today I am making two loaves of No-Knead Turbo Bread - Sourdough Flaxseed and White Whole Wheat Trail Mix.

“While grits do have an effect on blood sugar, when eaten as part of a balanced diet, they should not cause high blood sugars…As long as you don't exceed the ½-cup serving size, grits should not raise your blood sugar.”

JGE 76 – FBS Up Net 19 Points – Baked Swai and Russet Potatoes
Good Day,
My early blood sugar count has climbed over the past couple of days by 19 points to 116 mg/dL.
Last night supper showdown menu – Baked Swai and Russet Potatoes with a Spinach, Tomato and Onion Salad. And no ice cream for dessert.
But I did have a late night snack of Crackers and Peppered Goat Cheese.
Baked Swai and Russet Potatoes was a tremendous meal. Sliced Russet potatoes first baked and then the Swai filet placed on top.
Swai is the Vietnamese catfish as opposed to the type of catfish, the garbage scows and bottom eaters, which I used to catch, avoid the back fin spike and then throw them back in the water.
Swai cannot be legally marketed as catfish in the United States. The Southeastern Asia Swai can also be known as Shark Catfish…but they are not a shark. Confused? It’s Swai.
Beginning Monday I manage my supper menus and snacking habits, once again. Once diagnosed with Diabetes the management of my diet has been a consistent and continual redo and redo and redo.
Results –
FSB – 116 ↑ up 97 (Normal range 100 – 125 mg/dL)
A1c – 5.36 ↑ up 5.35 (Normal range 5.7 – 6.4 %)

JGE 75 – FBS Down 12 Points – Asian Sweet Chili Chicken and Steamed Bok Choy
Good Day,
My early blood sugar count went down by 12 points to 97 mg/dL.
Supper showdown menu – Asian Sweet Chili Chicken, Steamed Bok Choy and Rice.
The Chicken feature was done in the slow cooker. It sort of took on a look of an Asian pulled/shredded meat dish.
I didn’t have any Hoisin Sauce in the house so I substituted the same amount with Black Bean Garlic Sauce. Topping the rice it was somewhat a wee bit salty but the rice and the Steamed Bok Choy help to cut that down.
I obviously liked it as I had 2nd helpings.
And then again I did have a bowl of B&J with one cookie.
Lunch was a Ham and Swiss Sandwich with freshly baked White Sourdough Bread prepared and cooked a la Turbo No-Knead way.
Results –
FSB – 97 ↓ down 109 (Normal range 100 – 125 mg/dL)
A1c – 5.35 ≡ 5.35 (Normal range 5.7 – 6.4 %)
